How to make pancake pie with chicken, mushrooms and cheese

First, it is advisable to prepare the filling, because... it takes quite a long time. To do this, mushrooms (for example, champignons) must be peeled, washed and finely chopped. Finely chop the onion and greens too. Fry the onion in vegetable oil, then put the mushrooms in it, a little water and simmer them for about 10 minutes. Then add salt to the mushrooms and simmer for the same amount (until all the liquid has evaporated). Mix mushrooms with half of the prepared herbs.

Wash the chicken fillet, add water and bring to a boil. After the water boils, it is advisable to pour it out, wash the fillet in running water, add water again and set to cook. After boiling, add salt to taste and bay leaf to the water. Cook the fillet until done. Boiled chicken meat should be finely chopped.

Housewives note: preparing pancake pie with chicken and mushrooms will take much less time if you cook the mushrooms and meat the day before.

When the filling is ready, you can start making pancakes. To do this, beat the eggs with salt in a deep bowl, add kefir, sunflower oil and, gradually adding the sifted flour, mix everything well. Pour soda into a glass of boiling water, stir and pour into the dough. Mix the dough thoroughly and let it stand for 5-7 minutes.

Pour the batter into a well-heated frying pan and fry the pancakes over medium heat. Place the finished pancakes in a heap on a plate.

Mix chicken meat with herbs and mayonnaise, pepper or add other spices to your taste. If desired, you can also add a finely chopped boiled egg. Grate the cheese into a separate plate.

Cover this layer with another pancake, on which spread the mushroom filling. Also sprinkle it with grated cheese.

Do the same operation with the rest of the pancakes and filling. Cover the pie with the edges of the pancakes that hang over the pan. If there are not enough of them to completely cover the pie, you can put another pancake on top.

Place the pan with the pie in the preheated oven and bake it at 180 degrees for about 15 minutes (until the cheese melts).

After taking out the oven pan, you need to cover it with a dish and quickly turn the pie onto the dish.

You can make this pie without baking it. In this case, the pancakes are immediately placed on a dish, coated with the filling as described above, and left for about half an hour to soak.

Before serving, the pancake pie can be decorated with herbs. It goes well with vegetable juices and salads.

  • 300 g chicken fillet
  • 80 g onion
  • 1 tbsp. vegetable oil
  • 150 gr sour cream

  • 400 ml milk
  • 1/8 tsp salt
  • 1 tbsp. sugar
  • 1 PC. egg
  • 200 gr wheat flour
  • 4 stalks dill
  • 1 tbsp. vegetable oil
  • 50 g cheese
  • 1 PC. egg

Cooking method

    Cut the chicken fillet into small cubes, and the onion into small cubes. Fry the chicken with onions in a well-heated frying pan with vegetable oil for 5-6 minutes. Add salt and pepper to taste. Cool the filling to room temperature. If there is liquid, drain it.

    In a bowl, mix sour cream of any fat content and eggs.

    Add the mixture to the chicken and onions and stir.

    Prepare pancakes: heat milk to 35-40 degrees. Add salt, a level tablespoon of sugar, an egg and mix well with a whisk. Gradually sift the flour. Stir, achieving a uniform consistency of liquid sour cream and getting rid of lumps.

    Wash the greens, dry and finely chop, then add to the dough and mix.

    Prepare the pancakes: Heat a frying pan over medium heat, brushing the bottom with oil if necessary. Cook pancakes on both sides until golden brown. Place the finished pancakes in a stack on a plate.

    Turn on the oven and preheat to 180 degrees. Grease a baking dish (the recipe used a cast iron frying pan with a diameter of 20 cm) with vegetable oil. Set aside 2 pancakes, lay the rest overlapping in a circle so that their edges hang halfway over the sides of the pan.

Thin filled pancakes are delicious on their own, but today I propose to complicate the culinary task and assemble a pancake pie with chicken and mushrooms. In a similar way, products are formed with other fillings: cottage cheese, cabbage, meat... I advise you to additionally cover the pie with breadcrumbs and butter, then a delicious crispy crust will form.

To prepare pancake pie with chicken and mushrooms, take the ingredients from the list. You will need pancake dough, boiled chicken, mushrooms, onions, vegetable oil, spices, eggs, milk, butter, ground crackers.

Let's bake thin pancakes, and the dough recipe can be your favorite, proven one. My arsenal is as follows: for 600 ml of milk I take 200 g of flour, 2 eggs, 4 tbsp. sugar, a pinch of salt, 4 tbsp. vegetable oil. I mix it the night before, leave it in the refrigerator for 8-12 hours, and bake it the next day.

For the filling, we chop the meat of pre-boiled chicken (better - the parts on the bone, they are more juicy than fillet), onions and champignons (often additionally fried, for me - raw). Stir, season with pepper and salt.

Place dense bars of filling on each pancake and roll it up.

We first line a fireproof container with empty pancakes (6 pieces were used here), then we place pancakes with chicken and mushrooms (about 9 pieces) in two tiers.

To make pancake cake with chicken, you need to prepare the pancakes and filling separately. First, let's start baking pancakes. Use whatever recipe you like best (but use half the sugar in the dough), or use the one below as a base.

Pancakes

You will need:

  • milk - half a liter. Choose the fat content yourself (from 1 to 3.2%);
  • egg - 2 pieces;
  • flour - 1 cup (250 ml);
  • vegetable oil - 1 - 2 tablespoons. Replace with butter if desired. Melt it in a water bath to a liquid consistency;
  • sugar - 1 tablespoon;
  • salt - a pinch.

From the dishes, take a pancake frying pan (a simple one with a thick bottom or non-stick coating will do), a deep container (bowl), a ladle, a whisk or a mixer. Prepare food in advance. Leave them for 2 - 3 hours until they come to room temperature (the dough will be more homogeneous).

Cooking process:

  1. Break the eggs into a container. Add sugar and salt there. Whisk.
  2. While stirring the eggs, pour in the milk.
  3. Sift the flour. Gradually introduce it into the liquid mass.
  4. Add butter to the dough. Mix thoroughly. Check if the mass is homogeneous. If there are any lumps, stir again until they disappear. The consistency of the dough resembles liquid yogurt or sour cream.

Leave the finished dough on the table for 7 - 15 minutes. Then stir and start frying:

  1. Place the frying pan over high heat. Once the pan is hot, reduce the heat to medium-low. Grease the bottom with butter or a piece of lard.
  2. Scoop the dough into a ladle and pour the mixture into the center of the pan. Using a circular motion with your hand, spread the dough over the entire bottom. Fry for a minute.
  3. Use a knife or spatula to lift the pancake and turn it over to the uncooked side. Leave the pancake for 20 - 30 seconds.

Prepare all the dough in this way (the more pancakes, the higher the pie will be). Then work on the chicken filling.

Filling

You will need:

  • chicken meat - half a kilogram. Give preference to fillet;
  • egg - 3 pieces;
  • hard cheese - 150 - 200 grams;
  • green onions - 100 grams;
  • garlic - 2 - 3 cloves;
  • dill and parsley - to taste;
  • mayonnaise or salted sour cream - to taste;
  • onions (optional) - 1 - 2 pieces.

If you like tomatoes, you can add 2 - 3 fruits to the filling. Salt to taste.

Cooking process:

  1. Prepare chicken meat - fry with onions, stew or boil. Another option is to boil it, then fry it with onions. Don't forget to salt it. Cut the finished meat into small pieces or break it with your hands.
  2. Boil the eggs. Cool and peel. Cut into small pieces.
  3. Grate the cheese. It is preferable to use a fine grater.
  4. Chop the herbs and garlic.
  5. If you decide to add tomatoes to the dish, cut the fruits into slices or cubes.

When all the ingredients are ready, assemble the pie. Here you can choose one of two options (or come up with your own):

  • put all the products in a deep bowl, add sour cream or mayonnaise and mix. Place the pancake as the first layer, the filling as the second;
  • mix all ingredients except tomatoes and dressing. Place the pancake in a bowl, place the filling on top, put the tomatoes on it, and again – the pancake.

Lay out all the layers in this way. Grease the top pancake with dressing (mayonnaise or sour cream) and sprinkle with grated cheese. Leave the assembled pie for 2 - 3 hours so that the pancakes are soaked, or place in a preheated oven for 3 - 7 minutes (the cheese will melt and the pie will acquire an appetizing golden brown crust).

Another interesting option for a second course, but not with pancakes -. This dish will feed the whole family, rest assured.

With chicken and mushrooms

Pancake pie with chicken and mushrooms is prepared in a similar way. The pancake recipe is the same, the filling is different.

You will need:

  • chicken meat - 400 - 500 grams. Sirloin is best;
  • mushrooms (champignons, oyster mushrooms or others) - half a kilogram;
  • hard cheese - 200 - 250 grams;
  • egg - 3 pieces;
  • mayonnaise or sour cream - to taste;
  • onions - 1 - 2 pieces;
  • green onions or other greens - 100 grams;
  • garlic - 3 - 4 cloves.

If desired, add tomatoes to the dish - 1 - 2 pieces. Salt or add spices to the dish to taste.

Cooking process:

  1. Process the chicken as described in the first recipe. Cut into cubes.
  2. Wash the mushrooms. Cut into small pieces. Chop the onion. Pour vegetable oil into a frying pan and fry the mushrooms for 10 - 15 minutes under the lid. Then add the onion. Simmer until done.
  3. Boil the eggs. Finely chop.
  4. Grate the cheese.
  5. Chop green onions and garlic.
  6. If using tomatoes, cut the fruit into cubes.
  7. Place meat, eggs, herbs and garlic in a bowl. Add dressing (sour cream or mayonnaise) and stir.

Now we form the pancake pie. Take a large dish and place a pancake on the bottom. Place chicken filling on top and tomatoes on top. Sprinkle with cheese. Cover the layer with a pancake. Place mushrooms on it. The next layer is with chicken. Continue forming the cake until you run out of ingredients. Grease the top pancake with dressing and sprinkle with cheese.
